In
Brazil, it’s an afternoon treat to visit your
favorite luncheonette with a friend and
share a salgadinho (savory pastry) and
some good conversation.
“Salgadinho”
is a general term describing all Brazilian savory
pastries. Each is named by the shape of the pastry
and type of dough used.
Risoli
- a half-moon shaped pastry made with flour and
rolled in bread crumbs
Pastel
- very similar to an "empanada," pastel
is a thin dough from flour
Empadão
- a savory cupcake, brushed with butter and baked
to a golden brown
Bolinho
de Aipim - a stuffed yuca-root pastry
Kibe- although no dough, kibe is beef with
tabuli, mint, garlic, onion and other delicious
flavors
*Rio's
Brazilian doesn't make coxinha. We
make risoli instead. We feel coxinha has
too much dough, and not enough (awesome) filling.
